Velvety Vegetable Cheese Soup


1 pkg. (16oz) frozen broccoli, cauliflower and carrot mix
(Glen is not a big fan of this, but you mash it up in the end and if I wouldn't have told him he would have never known)
2cans (14oz each) chicken broth
3/4 lb (12oz) velveeta
...then I added some potatoes also

1. Place veggies and broth in large saucepan; cover. Bring to boil on medium-high heat. Reduce heat to low;simmer 10 min. or until veggies are tender.

2. Mash vegetables with potato masher to desired consistency

3. Stir in velveeta; cook 5 min. or until velveeta is melted and soup is heated through, stirring frequently.

4. Then we ate this in bread bowls and my kids liked ritz broken up on top.
This is my newest favorite find. It's really good, and great to warm you up in this Nevada cold weather. :)

I LOVE this soup. It is June 9th and it is still on the cool side! I am craving soup. This is the second time I've come to this site to track down the recipe. LOVE IT!
