(makes 4 dozen muffins so ½ or ¼ the recipe)
¾ cup oil
6 cups cheddar cheese
1 ½ cup sugar
4 cups grated apple
4 eggs
6 cups flour
3 cups sour cream
2 TBS baking powder
½ TBS baking soda
½ TBS salt
Step 1: Blend together oil and sugar on speed 1, then on speed 2. Scrape sides of bowl and under paddle well
Step 2: Mix baking soda in sour cream. Add to eggs, and then add to sugar mixture, using speed 1
Step 3: Blend cheese and apple into dough using speed 1. Then take off paddle and use dough hook, using speed 1 all the time
Step 4: Mix flour, baking powder and salt together
Step 5: Very carefully fold flour mixture into dough mixture.
Bake @325 for about 25 min until the muffins spring back
