Twice Baked Ranch Potatos

4 Idaho Potatos

Olive Oil
1/2 cup Buttermilk
1 packet Ranch salad dressing and seasoning mix
Shredded Cheddar Cheese

Rub Potatoes all over with Olive Oil. Can sprinkle with salt if you'd like. Put on cookie sheet and bake at 350 for 1 hour. Let cool for a few minutes then slice each potato in half lengthwise. Spoon out middle of each potato half and put in bowl for mixing. Mix Potatos with the buttermilk & ranch seasoning. Mix well with potato masher. (Can add more buttermilk to the texture you would like. ) Spoon mixture back into the potato halves and top it off with shredded cheese. Put back in the oven to melt the cheese and you are done! This gives your potatos a little zesty kick and is a great side dish!
