MES Basic Sweet Dough

2c. warm water
2T. yeast
4 eggs
3/4 c. powered milk
2t. salt
1/2 c. sugar
1/2 c. oil
6 1/2 c. flour

Dissolve yeast in water. Add milk, eggs, salt, sugar, and oil. Add 1/2 of the flour and whip to make a sponge. Add remaining flour and mix or knead. Let rise 1 to 1 1/2 hours. Roll out to make Cinnamon Rolls or Caramel Pecan Rolls.

For Cinnamon Rolls: Add 1 cup raisins to dough when mixing. Roll out and brush with water (not butter, (this dries out the dough). Sprinkle with cinnamon and sugar mixture; roll up. Place on baking sheet to let rise. Bake at 400 degrees for 12-14 minutes.

For Carmel Pecan Rolls: Roll out dough; brush with water, not butter; Sprinkle with brown sugar and chopped pecans. Roll up and cut as cinnamon rolls.

To make Kolachies: Dough may need a little more flour so you can handle with hands. After down has risen, pinch off small balls of dough and place on baking pan far enough apart that they won't tough after rising. Let rise until real light. Take a small round cup and press down in middle of dough (dip cup in flour to keep from sticking). Fill with your favorite fruit pie filling and bake at 400 degrees fro 12-14 minutes. Pour a white glaze over rolls after they cool.
