SunShine Muffins

2 bananas mashed
14 oz applesauce
1 whole egg and 2 egg whites
2 TBS vanilla
2 cups grated carrots
1 cup flour
2 tsp baking soda
1 cup coconut
1/4 cup brown sugar
1 1/2 cups bran cereal
1 TBS cinnamon
2 TBS poppy seeds
3/4 cup mini chocolate chips

Mix until moistened. Spray muffin tins with Pam. Bake at 375 for 20-25 minutes. Freeze extra muffins.

*I have been trying to eat healthier and came across this recipe. (For anyone doing Weight Watchers it is 1 point per muffin) and I thought it tasted pretty good.
