Crock Pot Enchilada Casserole

1 1/2 lbs ground beef, seasoned & drained
12 corn tortillas
1 can corn
1 large can chili beans
1 can olives, sliced (I use smallest can)
3 cups cheddar cheese, grated
1 large can mild enchilada sauce

1. In crock pot, layer hamburger, corn, beans, olives, sauce, cheese, and 3 tortillas- repeat 3-4 times.

2. Cover & cook on low 4-5 hours or until heated through.

This is quick, easy and my kids acutally really like it. I like to have some burger cooked and frozen, so you just pull it out to thaw, layer and you done!!

Meatball Subs

Prep Time:10 min
Total Time:24 min

1 lb. lean ground beef
6 RITZ Crackers, finely crushed
1/4 cup KRAFT 100% Grated Parmesan Cheese
3/4 cup spaghetti sauce, divided
12 KRAFT Cheddar Cheese Cubes
4 hot dog buns, partially split

PREHEAT oven to 400ºF. Mix meat, cracker crumbs, Parmesan cheese and 1/4 cup of the spaghetti sauce in medium bowl. Shape into twelve meatballs, using about 2 Tbsp. meat mixture for each.

PLACE, 2 inches apart, in shallow baking pan sprayed with cooking spray. Press 1 cheese cube deeply into center of each meatball.

BAKE 14 min. or until meatballs are cooked through (160ºF). Meanwhile, microwave remaining 1/2 cup spaghetti sauce in small microwaveable bowl on HIGH 30 sec. or until heated through (adult assisted).

SPOON sauce evenly into buns. Fill each with three meatballs.

Ok, so this is yet another recipe from Kraft. Very easy and yummy, even the kids like this one! And they loved pushing the cubes of cheese into the meatballs. I must have made them a little smaller because I actually got quite a few more meatballs than the recipe says.

Ground Beef Vegetable Soup

1 lb lean ground beef or ground turkey
1 medium onion, chopped
16 oz package frozen mixed veggies
4 cups vegetable or tomato juice (V8 juice)
4 cups hot water
2 TBS instant bouillon
1 tsp basil leaves
1 tsp seasoned salt
½ tsp pepper
¼ tsp garlic powder
½ pkg thin spaghetti (optional; I do not add)
grated parmesan cheese

In a large pot, brown ground beef and onions. Drain. Stir in next 8 ingredients; bring to a boil and reduce heat; simmer for 20 minutes. Cook thin spaghetti. Stir into soup and heat through. Serve with parmesan cheese.

I am not a big V8 fan, but I really love this soup! I add more veggies and less meat as well. Enjoy

Favorite Meatloaf

1 cup finely chopped onions (about 1 large)
1/4 cup KRAFT Light Zesty Italian Reduced Fat Dressing
2 lb. extra lean ground beef
3/4 cup ketchup, divided
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 egg whites
1/2 cup KRAFT 2% Milk Shredded Reduced Fat Sharp Cheddar Cheese
1. PREHEAT oven to 375°F. Cook onions in dressing in large nonstick skillet on medium heat 8 to 10 min. or until golden brown, stirring frequently. Remove from heat; cool slightly.
2. COMBINE meat, 1/4 cup of the ketchup, the stuffing mix, water, egg whites and onions; mix well. Place meat mixture in 13x9-inch baking dish; shape into 10x5-inch oval loaf. Spread with remaining 1/2 cup ketchup.
3. BAKE 55 min. to 1 hour or until cooked through (160°F). Sprinkle with cheese; bake 2 min. or until cheese is melted.

I gotta tell ya, my family loves this meatloaf, although I've decided it's our cursed meal. Once I made it ahead of time didn't take it out of the fridge early enough-my pan shattered (I was pregnant which made it even more dramatic). Then just last week I made it and got distracted talking to my brother on the phone and then helping Hayli make some stickers that I boiled the water right out of the mashed potatoes that were the side dish.. struggle
