2c crushed ritz crackers
1T poppyseed
1/2c melted butter
1 whole, cooked deboned chicken (I usually use a quart of bottled I think)
1 can cream chicken soup
1 16oz sour cream
Mix crackers, poppyseed and butter together. Press into baking dish; reserve 1/2 cup crust. Mix remaining ingredients; pour over crust. Sprinkle remaining crumbs on top. Bake 1 hr at 350, let set 10 minutes
*I haven't ever put poppyseed in because it's not something I have and don't ever remember to buy. It still great w/out. All the other ingredients are staples in my house so I love this because its really quick to make and really good. We eat it over rice.

Easy BBQ Pizzas
I know I saw this on Sam the Cooking Guy awhile back, we tried it and liked it. But now I can't find the exact recipe, so this is all I remember and you can add what you like? Since pillsbury grand biscuits & chicken are on sale this week...
1 can biscuits
bbq sauce
shredded chicken (I just used bottled/canned)
cheese
Easy.. Flatten biscuits on pan, add bbq sauce, chicken and cheese and bake. Yummy pizzas :)
*We also do pizza/spagetti sauce & pepperoni pizzas with these.

Orange Chicken Sandwich
8 chicken breasts
3 TBS salt
1 (12 oz) can frozen orange juice concentrate
Place chicken in crock pot and cover with water. Add orange juice and salt. Cook for 5-6 hours on low. Wash off and cool. Cut chicken into cubes.
Add:
1 cup sliced grapes
1/2 cup diced onion
1/2 cup diced celery
3/4 cup almonds or cashews
1 1/2 cup mayo or more as needed
salt and pepper to taste
Refrigerate before serving. I served them in croissants!

Chicken Salad
2 1/2 c. cooked chicken (shredded or cubed)
1 c. celery
1 c. grapes
1/2 c. slivered almonds
2 tsp. parsley
1 tsp salt
1 c. mayo
1/4 c. heavy whipping cream
1. Beat heavy whipping cream until it peaks.
2. In another bowl add ALL other ingredients, add to cream.
I got this from my sister in law. It's a great summer/picnic repice. It's yummy on bread, cresent rolls or torillas!!

Salsa Chicken
4 Chicken Breasts
1 c. salsa
1 can cream of chicken soup
2 c. minute rice
Add first 3 ingredients to crockpot, cook on high 4 hours or on low for 7-8 hours.
During the last 10-15 minutes :
Break up the chicken then add the rice.
Put on tortillas and add cheese, sour cream, etc.
I did end up adding a little water when I put the rice in, but this was really good!! With 3 easy ingredients this is a GREAT Sunday morning recipe! It's good left overs too.

Shortcut Chicken Manicotti
Total Time:1 hr
Makes:4 servings, three stuffed manicotti each
1 can (10-3/4 oz.) condensed cream of chicken soup
1-1/2 cups water
1/4 lb. (4 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up
2 cups frozen broccoli florets
12 manicotti pasta, uncooked
1 lb. boneless skinless chicken breasts, cut into 1/2-inch strips
1/4 cup KRAFT 100% Grated Parmesan Cheese
PREHEAT oven to 400ºF. Mix soup, water and VELVEETA in microwaveable bowl. Microwave on HIGH 3 min. or until VELVEETA is melted and mixture is well blended, stirring after 2 min. Pour one-third of the soup mixture onto bottom of 13x9-inch baking dish; set aside. Add broccoli to remaining soup mixture.
STUFF pasta with chicken strips; place in baking dish. Cover completely with remaining soup mixture. Sprinkle with Parmesan cheese. Cover with foil.
BAKE 45 to 50 min. or until pasta is tender and chicken is cooked through.

Chicken Cordon Bleu Casserole
4 cups cooked and diced chicken breasts
2 cans cream of chicken soup
8 oz sour cream
2 cups ham chunks
2 cups grated Monterey jack cheese
bread crumbs
Mix everything together except bread crumbs. Pour into freezer casserole dish. Sprinkle bread crumbs over top of casserole. Label and freeze. When thawed, bake uncovered at 350 for 40 minutes until bubbly. Serve over rice.
I make this and freeze it and pull it out whenever someone in the ward has a baby or is in need of a dinner. It is a nice dinner to take to a family.
