Fettucine Alfredo

1 1/2 lb dry fettucine pasta
1 c marg.
1 1/2 c. heavy cream
salt & pepper to taste
dash garlic salt
3/4 c. grated Romano cheese
1/2 c. grated parmesan cheese

Bring large pot of slighty salted water to boil. Add fettucine and cook 8-10 minutes. Drain. In a large saucepan, melt margarine and cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted, this will thicken the sauce. Add pasta to sauce. Serve immediately.
Approx. 15 min

I got this recipe from my aunt Vickie.. It was a hit, the kids went to work!! Really easy, really good! Next time I will do less butter, 3/4 maybe even 1/2- 1c is to much.. Other than that it's a keeper.

Shortcut Chicken Manicotti

Prep Time:10 min
Total Time:1 hr
Makes:4 servings, three stuffed manicotti each
1 can (10-3/4 oz.) condensed cream of chicken soup
1-1/2 cups water
1/4 lb. (4 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up
2 cups frozen broccoli florets
12 manicotti pasta, uncooked
1 lb. boneless skinless chicken breasts, cut into 1/2-inch strips
1/4 cup KRAFT 100% Grated Parmesan Cheese
PREHEAT oven to 400ºF. Mix soup, water and VELVEETA in microwaveable bowl. Microwave on HIGH 3 min. or until VELVEETA is melted and mixture is well blended, stirring after 2 min. Pour one-third of the soup mixture onto bottom of 13x9-inch baking dish; set aside. Add broccoli to remaining soup mixture.
STUFF pasta with chicken strips; place in baking dish. Cover completely with remaining soup mixture. Sprinkle with Parmesan cheese. Cover with foil.
BAKE 45 to 50 min. or until pasta is tender and chicken is cooked through.
**When I do this again I will double the sauce, I didn't think it was enough to cover it and it would be better with more. Also Glen doesn't like broccoli and suggested that zuchini & squash would be better? (but he doesn't always know best :)

2 Versions of Manicotti

So my kids are big pasta eaters... Here are two different kinds of manicotti, I like this one better but the other one is good too- this one is from our family cookbook?

Manicotti
1 small container cottage cheese
8oz mozzarela chs
1 egg
parsley flakes
salt & pepper
1 large bottle spaghetti sauce
manicotti shells
1. Combine cottage cheese, mozzeralla cheese, egge, and parsley flakes. Salt & pepper to taste.
2. Stuff uncooked shells and put in 9x13 pan filled with half of the spaghetti sauce. ( I usually put cheese mixture in a ziploc and cut a corner out-like frosting-to fill the shells)
3. pour remaining sauce over shells and add 1/4 bottle of water.
4 Cover pan tightly with aluminum foil. Bake 400 for 50-60 minutes..

Easy Baked Spaghetti

1 lb. hamburger
1 tsp. garlic salt
2 large cans Manwich sauce
1 box angel hair spaghetti noodles
2 c. Mozzarella cheese, shredded*
Salt and Pepper to taste (watch salt amount since garlic is salty)

Brown hamburger meat with garlic salt, pepper and salt. Drain off grease. Add Manwich sauce to meat and simmer for 10 minutes while boiling noodles.

Preheat oven to 425 degrees. In oblong casserole baking dish, spread a thin layer of hamburger sauce, then a layer of noodles, layer of sauce, layer of noodles, layer of sauce; top with the shredded cheese. Bake until cheese melts and brown (if desired).

*I use chedder cheese instead of mozzarella because my family likes it better.

Italian Crockpot Chicken

6 chicken breasts (boneless)
2 cans Cream of Chicken soup
1 (8 0z) cream cheese
2 pkg. dry Italian seasoning mix

Place chicken in crockpot. Mix cream of chicken soup, cream cheese and Italian seasoning mix together until well blended. Pour over chicken. Cook on LOW for 6 to 8 hours or HIGH for 4 to 5 hours.

Shred chicken in crockpot with sauce. Serve over egg noodles or rice.
